Grand Cru Easter Bunny «Nostalgia»

In the “Grand Cru Easter Bunny Nostalgia” video course, you’ll learn how to create a high-quality chocolate specialty featuring a delicate hazelnut praline filling. The course also walks you through, step by step, how to roast Piedmont hazelnuts, make an aromatic praline filling from them, and perfectly combine it with Grand Cru couverture.

What makes this special is the interplay between fine chocolate and intense hazelnut. Roasting allows the Piedmont hazelnuts to develop their full aroma, while caramel, vanilla, and fleur de sel create a harmonious balance. Likewise, the careful processing of the couverture gives the Easter Bunny a melt-in-your-mouth texture and an elegant finish.

You’ll learn all the steps in the video, accompanied by a written description. David Schmid shows you how to prepare the molds, work with the couverture properly, and mix the praline mixture thoroughly. At the end, you’ll evaluate the final product during a tasting and can download your certificate.
