The inspiration for Pompon de Princesse comes from the legendary Ispahan macaron by the patissier Pierre Hermé. In this video course, expert David Schmid will show you how to give this classic flavor combination a modern twist – with precise technique, French flair, and a stunning presentation.

You will learn how to prepare the macaron mixture using the Italian meringue technique, how to create a stable shell, and how to combine the light rose and raspberry mousse with delicate fruit seeds. David Schmid explains every single step clearly and comprehensibly – from piping to perfect assembly.
