Egg wash

Egg wash is used to brush baked goods before and after piece proofing.

Brushing before piece proofing prevents the surface from drying out. During baking, the egg wash promotes the Maillard reaction, resulting in an attractive golden color and a glossy finish.

Salt helps the eggs blend more smoothly, while sugar enhances the shine.

  • Beat eggs, add salt and sugar.
  • Mix thoroughly.
  • Strain through a fine-mesh sieve.
