Tools Description
A deep-fat fryer is used to fry boiled pastries such as Berliners, doughnuts or quark balls. It ensures even and precise temperature control for consistent frying results. Its robust design, easy cleaning and high performance make it ideal for daily use in the bakery.
Chrome steel panA chrome steel pan is ideal for professional use in the bakery industry, for example for frying pancakes or other pastries. It is robust, heat-resistant and enables even heat distribution. Thanks to its smooth surface, it is easy to clean and particularly durable.
pH meterA pH meter is used to precisely determine the acidity of sourdoughs. By controlling the pH value, fermentation processes can be better controlled, which contributes to improved dough quality, taste and shelf life of the baked goods.
Crepes-PlateA crêpes plate is a professional kitchen appliance for the quick preparation of thin batter. It has a large, evenly heated surface with adjustable temperature and is ideal for use in the bakery.
Biscuit Capsule 24×44 cmA biscuit capsule is a baking frame, usually made of aluminum steel with welded corners. It is used to bake doughs evenly and with a stable shape.
It is particularly suitable for the professional or quick production of biscuit bases, for example for cakes or slices. After baking, the base can be easily removed and processed further.
Weggli (bread roll) pusherFor making the Weggli (bread roll), the Weggli pusher is ideal for efficient and accurate work. The dough piece is divided into two halves by hand without separating the halves from each other. The Weggli pusher is made of plastic, which ensures easy cleaning.
Optionally, a thin rod can be used to divide the dough piece.
Dough clothFor rolling or depositing dough pieces. The supply of different fibers provides excellent dough repellency. The dough pieces can be easily removed from the dough cloth, as they are neither sticky nor stick together.
The dough cloth is food safe as well as tear resistant and inhibits the formation and absorption of mould spores.
The dough cloths are easy to clean and machine washable up to 60°C.
Optionally, a tea towel can be used.
Dough puncherThe dough puncher is used for efficient and uniform perforation of larger dough surfaces. Especially for rolled-out dough where bubble or volume formation is not desired.
Optionally, a fork can be used to poke the dough.
Grater/Rösti graterThe grater is an indispensable helper in many kitchens in Switzerland. This popular tool is handy, easy to clean and durable.
The Rösti grater not only cuts potatoes for a fine Rösti, but also cabbage, beetroot, carrots or apples for the apple tart in course 2.
Personal Protective Equipment (PPE)Personal protective equipment for handling caustic soda includes safety glasses (also for people wearing glasses) and plastic gloves.
Compliant safety glasses, which also provide protection on the sides, are mandatory. They are used for protection to prevent sodium hydroxide from getting into the eyes. Conventional eyeglasses are not sufficient.
Flour brushThe flour brush is used to sweep up flour and coarse, dry dough residues before cleaning the tables. Final cleaning is then easier.
Triangle cutting rollerThe triangular cutting roller can be used to cut rolled-out dough into triangles of the same size. The roller is rolled over the dough from one side to the other.
Optionally, the dough can be cut into triangles by hand using a measuring stick and a kitchen knife.
The roller is not dishwasher safe.

Proofing basketsThe dough baskets (long or round) made of pedding cane with a volume of about 600 grams serve as proofing baskets of the dough pieces so that they keep their shape and stability.
It is important to dust each of the baskets in advance to prevent sticking.
In addition, the piece proofing in the basket leads to a striped pattern on the dough piece.
Cake tin/Quiche tinThe aluminum cake tin (28 cm Ø) is used to line cakes and quiches with any height of the edge. Cakes tend to be made in higher moulds (3–4 cm) and quiches tend to be made in lower moulds (2–3 cm).
Perforated trays are best, as the bottom will then bake evenly and no bubbles will form.
Aluminum is not dishwasher safe.
