Perforated trays have many advantages over flat baking trays. The holes allow heat to reach the pastry more evenly. Even with baking paper, the hot steam can penetrate the dough and bring out the best results.

Perforation is also perfect for tartlets or sponge cakes. Cake layers are boosted by the heat and become extra airy during baking. In combination with a stainless steel cake ring, the perfect cake base can be baked.
